al DenteAl Dente is Italian for pasta that is cooked just right "to the bite" or "to the tooth" which means it should be cooked until firm, but doesn't stick to the teeth, which means it is undercooked. So, with that in mind, we enter into the al Dente restaurant in Bally's at Las Vegas. In this ristorante, the food is great Italian inspired food with the emphasis on the pasta dishes, served with style and flair, and a bottle of good red wine; also preferably from Italy.

To begin your dining experience at al Dente, the appetizers are mainstream Italian and very tasty; like the antipasto, eggplant parmesan, salads, fried mozzarella, steamed clams or mussels. The side dishes include; sautéed spinach, mixed vegetables, pasta and broccoli rabe. The soups are few with the chef's daily selection and escarole and meatball being offered. But with classic dishes like capellini with lobster tails, spaghetti Bolognese, shrimp scampi, chicken marsala, veal piccata steak pizzailoa and lasagna, you will get the distinct flavors and tastes of the old world Italy. The ingredients are fresh, crisp and plentiful, the pasta is al dente and the meats, poultry, seafood and cheeses are distinctly flavored yet not overpowering. The chicken cacciatore is excellent with the double breasted chicken sauteed to perfection with the red and yellow bell peppers, onions and mushrooms added at the right moment to accentuate the perfect blend. Add the white wine and tomato sauce and this is an excellent meal that will fill any discerning guest. Add some great red wine and excellent coffee with dessert and you have a great meal. The food is excellent with old Sicilian recipes, and many non-Italian dishes can be ordered here, but the main focus and style are Italian. The restaurant itself is charming yet casual set inside a casino, with wall sculpture and colorful glass. Like the name itself, the real emphasis is on pasta dishes that are plentiful, delicious and perfectly prepared. The flavors and aromas are all that they should be and many people have touted its cuisine. The homemade gnocchi is great especially with the veal sauce and prosciutto. Every day the chef prepares a special risotto that will surprise and delight you with its distinct flavor. The seafood is fresh and wonderful with many Italian dishes prepared with great taste in mind. The desserts are very traditional with tiramisu, biscotti, pignoli and amaretto cookies if you don't want anything heavy after a great meal. If you really enjoy desserts, then the New York cheesecake or cannolis can take care of that. Sorbets are there to cleanse your palates and lighter the heavy aftermath of a filling meal of pasta.

Set in a semi-romantic setting, the restaurant has just enough lighting to enjoy your meal, yet doesn't spoil the ambiance of the moment. The wines are fantastic, coming from all over the world to increase the pleasure of your meal and many good California wines are available. The price range is ample so you don't have to overspend for the meal to complement your food.
